They will appear underdone, but they will firm up considerably as they cool. They remind me of my great grandmother’s sugar cookies she always had in a cookie jar. I had flax milk in the fridge and added a healthy splash to the dough. We did – it changes the texture quite a bit and I wouldn’t recommend it. Dry out the beet chips(no flavor) a little more and grind it into powder. Now add in the almond milk, cornstarch, vanilla and almond extract (if using). You want this frosting to be pretty thick so it will hold its shape once on the cookies, so only add a little milk and add more powdered sugar if it gets too thin. I did keep the cut shapes in the freezer before baking and all my shapes stayed as they were. This recipe was a hit! Great recipe. So if you want to make really pretty sugar cookies, I recommend it!
